The new food at Beaver Creek this winter happens on specific days. Vail Resorts' Complete Guide to Beaver Creek: Winter 2026/27 labels three dining and après offerings as new: Spruce Saddle Cabin Corner, an Après Pop-Up Weekend at Mamie's and The Last Drop Whiskey Tasting. The Alpine Table also comes back in a winter version. Each one has fixed dates. None is a new place with daily hours. If you own here and want to try them, start with the calendar, not a reservation app.
The One Permanent Opening Is Down in Avon
The only new full-time restaurant nearby opened over the summer, and it isn't on the mountain. Vail Daily reported that Colletta opened June 22 at The Westin Riverfront Resort & Spa in Avon. It took over the lobby-level space that used to be Stoke & Rye. Executive chef Angel Muñoz runs an Italian-American menu, and The Indigo Road Hospitality Group operates it.
Up the hill, the lineup is the same. Beano's Cabin is still reached by open-air sleigh. Allie's Cabin is still a snowcat ride up, serving Northern Italian-inspired food. Zach's Cabin still sits above Bachelor Gulch with an Alsatian-inspired menu. The daily menus change in smaller ways. In a July 14, 2026 release, Vail Resorts said it is upgrading ingredients and presentation for staples like chili, burgers, pizza, fries, hot dogs, chicken fingers and mac and cheese at 15 destination resorts. It also said prices won't rise beyond normal inflation. The release doesn't name a Beaver Creek dish.
So everything new about eating on Beaver Creek Mountain this season is tied to a date.
Cabin Corner Runs on Eight Days at the Top of Centennial
Spruce Saddle Cabin Corner is the newcomer most likely to fit into a normal ski day. Spruce Saddle Lodge is the quick-service lodge at the top of Centennial Express lift #6. The resort's directions are to unload and ski left. The guide describes Cabin Corner as "a chef-curated destination inspired by The Cabins, bringing premium cabin-style flavors to fast, convenient on-mountain service." In practice, that's the cabins' style of cooking served on a lodge-lunch schedule, without the sleigh or snowcat ride.
The dates matter more than the description. Here they are with what else is on the schedule each day:
| Date | Day | Also on the Beaver Creek calendar |
|---|---|---|
| Jan. 5, 2027 | Tuesday | Nothing listed on the signature-events page |
| Jan. 19, 2027 | Tuesday | Nothing listed on the signature-events page |
| Feb. 20, 2027 | Saturday | Day one of Talons Challenge |
| Feb. 27, 2027 | Saturday | Nothing listed on the signature-events page |
| March 20, 2027 | Saturday | Day two of the Mamie's pop-up weekend |
| March 27, 2027 | Saturday | Nothing listed on the signature-events page |
| April 3, 2027 | Saturday | Nothing listed on the signature-events page |
| April 10, 2027 | Saturday | Nothing listed on the signature-events page |
The two January dates are the only weekdays. After that, every date is a Saturday, and two of them fall on days the mountain is already hosting something. Feb. 20 is the first day of Talons Challenge, the two-day push through 14 of the mountain's toughest black and double-black runs. Beaver Creek puts the total at more than 26,000 vertical feet. Talons Challenge tickets include lunch and a drink at Talons Restaurant, which is a different lunch stop from Spruce Saddle. Registration opens Nov. 25, 2026. March 20 overlaps the Mamie's weekend, which is across the mountain on the Bachelor Gulch side.
If you'd like to try Cabin Corner on a quieter day, the January Tuesdays are the ones to pick.
March Holds Almost Everything Else
Cabin Corner is spread over three and a half months. The other three new or returning experiences all fall within 15 days in March, in this order:
- March 6–7, The Alpine Table. The resort's events page describes an après happy hour presented by LALO Tequila and American Express, with live music, cocktails and small bites, followed by a tasting menu from Beaver Creek's culinary team. The guide says the winter version follows "a sold-out summer in the aspens," with wine pairings chosen by a sommelier and a menu from the chefs at Beaver Creek's fine-dining mountain cabins.
- March 13, The Last Drop Whiskey Tasting. This dinner has 14 seats. It pairs rare whiskies from The Last Drop, part of the Sazerac portfolio, with a multi-course meal from Beaver Creek's fine-dining chefs.
- March 19–21, Après Pop-Up Weekend at Mamie's. The guide describes a limited-time pop-up atop Bachelor Gulch with live music, specialty drinks and curated food. Colorado.com's winter 2026-27 roundup calls it "Boots & Bubbles at Mamie's."
- March 20 and March 27, Cabin Corner. Both are Saturdays. The first lands in the middle of the Mamie's weekend.
The location of the Mamie's event is the reason it's worth going. On a regular day, Mamie's is a quick-service, Colorado-inspired beer garden with Bavarian-style shareables. It sits at the top of Bachelor Gulch Express chairlift #16 and overlooks McCoy Park. For one weekend, a lunch stop becomes an après venue with live music. That's an easy ride for owners in Bachelor Gulch. Owners closer to the village have a longer trip across the mountain.
If you plan to go to more than one, the nine days from March 13 through March 21 deserve the most attention. It holds the Last Drop dinner, the full Mamie's weekend and one Cabin Corner Saturday.
What Beaver Creek Hasn't Posted Yet
As of late October, Beaver Creek hasn't published prices, booking links, sale dates or lift-access rules for any of the four events. The Alpine Table listing on the resort's signature events page still says:
"Stay tuned for tickets & more information coming soon!"
The resort also hasn't named a venue or chef for the winter Alpine Table or the Last Drop dinner. Last winter's Alpine Table, held Jan. 16–17, 2026, took place at Allie's Cabin with guest chef Matthew Vawter and Allie's executive chef Jillian Shaw. That was a precedent, not an announcement for 2027. We covered how the summer series worked in our look at the reservation-only dinner nights of summer 2026. The summer edition sold out, and the Last Drop dinner has only 14 seats. Plan on checking beavercreek.com directly rather than waiting to see it in a newsletter.
The Calendar Starts Nov. 25
Before any of the new dining dates arrive, Beaver Creek opens with its usual Thanksgiving-week events. Vail Resorts' Aug. 18, 2026 opening-dates release and the resort's events page both list Wednesday, Nov. 25, 2026 as opening day. The resort notes the date depends on weather and conditions. Our earlier post explains why opening day is the least reliable date on the December calendar.
The resort's events page lists this schedule:
- Wednesday, Nov. 25, 1–5 p.m. The Beaver Creek Cookie Competition. Five finalists compete, and guests can sign up as judges, with younger guests joining as "Judges in Training." Judging spots are limited, and the resort suggests arriving early.
- Friday, Nov. 27. The Tree Lighting & Ice Spectacular, with free ice skating, Santa, holiday crafts, a skating show at the rink, fireworks and the tree lighting.
- Saturday, Nov. 28. The Retro Skate Party at the village ice rink, with a live DJ and free hot cocoa.
Vail Resorts' press guide gives the tree lighting as Nov. 28 and adds a Holiday Market on Nov. 27–28. The resort's own events page gives the tree lighting as Friday, Nov. 27. Check the page the week of Thanksgiving before you plan a family dinner around it.
After that comes Birds of Prey from Dec. 3 through 13. Thursday Night Lights runs every Thursday from Dec. 17 through April 8, with a lit ski-down on Haymeadow followed by fireworks. Then come the two Cabin Corner Tuesdays in January, Talons Challenge in February and the March cluster. Put Jan. 5, Jan. 19 and March 13 through 21 on your calendar now. Those are the days the new food is actually being served.
